If you are like me....Monday needs a little kick start. That being said I have no desire to cook myself breakfast as I am scrambling to get my life together. Pre-made sriracha muffins are the answer. I spend a little extra prep time Sunday evening, but it is so worth it when Monday comes...and I have a healthy breakfast that can be microwaved and eaten on the fly. Check out the below recipe. You will have breakfast for a week....which is a life saver! Enjoy! XoXo, NaturallyNati List of Ingredients -9 Eggs -1/4 cup diced red pepper -1/4 cup diced tomato -1/4 cup diced green pepper -1/4 cup diced onion -1 hand full of spinach -1/4 cup shredded cheese -2 Tablespoons Sriracha -Sprinkle of red pepper flakes -Salt and pepper to taste Directions: 1. In large bowl whisk eggs. 2. Add vegetables, spices, and cheese. 3. Pour mixture equally into sprayed muffin tins (12 muffins). 4. Bake at 350 for 25 minutes.

I assume, that was a good Monday, isn't it? Actually, I have not tried Sriracha Muffins yet. But still, I can feel that it's a good snack especially if you made it through your own effort! By the way, thank you for listing down the needed ingredients for this recipe. I didn't know that making Sriracha Muffins could be very expensive since there are several ingredients that are not easy to find in the market. Hopefully, I will be given the chance to explore more types of muffins!
