If you are like me....Monday needs a little kick start. That being said I have no desire to cook myself breakfast as I am scrambling to get my life together. Pre-made sriracha muffins are the answer. I spend a little extra prep time Sunday evening, but it is so worth it when Monday comes...and I have a healthy breakfast that can be microwaved and eaten on the fly. Check out the below recipe. You will have breakfast for a week....which is a life saver! Enjoy! XoXo, NaturallyNati List of Ingredients -9 Eggs -1/4 cup diced red pepper -1/4 cup diced tomato -1/4 cup diced green pepper -1/4 cup diced onion -1 hand full of spinach -1/4 cup shredded cheese -2 Tablespoons Sriracha -Sprinkle of red pepper flakes -Salt and pepper to taste Directions: 1. In large bowl whisk eggs. 2. Add vegetables, spices, and cheese. 3. Pour mixture equally into sprayed muffin tins (12 muffins). 4. Bake at 350 for 25 minutes.

So these were the best find ever. COTTON CANDY FLAVORED GRAPES. And they are HEALTHY! WHAT??!?!? So I had seen some buzz on Twitter about cotton candy flavored grapes....so I of course had to find them. In Cincinnati...they seem to be in a lot of the local grocery stores. I happened to pop into Fresh Market this evening....they were $2.99 a lb (not terrible). Anyways, they taste EXACTLY like cotton candy. My mind is actually blown. I of course...being such the skeptic, came right home and started googling everything I could to prove that somehow these little gems were bad for me. But guess what? They aren't. Turns out....horticulturist David Cain cross-bred concord-like grapes with regular grapes....and POOF....heaven. Here is the nutrition break down (because OBVI I HAD to know): Serving size: 1/2 cup Calories: 50 Fat: 0 Carbs: 15 g Protein: 1 g FIber: 1 g Sugar: 14 g Compared to regular Green Grapes Serving size: 1/2 cup Calories: 53 Fat: .2 g Carbs: 14 g Protein: 1/2 g Fiber: .6 g Sugar: 12 g So for two more grams of sugar.....I will GLADLY close my eyes and pretend I am at the circus. Without a doubt. How about them apples (or grapes in this case)?!?!?! XoXo, NaturallyNati As week two of school approaches (and only the 4th day with students...I know I am dramatic), I definitely could use a little motivation. It's funny because as a teacher and fitness professional you'd think I would be trying to motivate myself....because that is kind of part of the gig...right? But I recently told one of my clients she is my motivation....so I kinda have to share her story!! Sowmya Aggarwal has so much dedication it's insane. Not only is she a mom of two, one of the two being 4 months old (so you can only imagine how much sleep she gets), but she trains at 5:30 AM before working a full day! She recently turned 30, and when I wished her happy birthday via text, she replied thank you...and that she couldn't wait to get in the best shape of her life! To me, that was so inspiring. Instead of using exhaustion, work and family as excuses for reaching her goals, they are her fire. She wants it, and she is getting it. Not only is she down 7 lbs, she fits back into her "old pants" and more importantly she has more energy and feels great! The paramount piece of Sowmya is that she is getting others to join her in her journey. She has her sister-in-law and husband on board and is spreading her excitement for fitness and feeling great to everyone around her. So...as the week approaches, think of Sowmya. Get out your planner and schedule your workouts, plan for healthy meals, pack your lunches....and when you feel too tired or busy to workout....know you can do it! I promise....your health is worth it!

So luckily....as I walked in the door from the most fun bachelorette weekend ever, the aroma of ripe bananas filled my house. Perfect excuse to create a healthy treat to help slowly ween myself off of the sweets. Plus it was super easy. So check out the below recipe for peanut butter and banana homemade ice cream!!!
Ingredients: 2 ripe bananas 1 tsp vanilla 1 Tbsp peanut butter Chocolate chips for topping (optional) Directions: 1. Puree bananas in food processor until they become liquid. 2. Add in peanut butter and banana. (will be very smooth) 3. Freeze overnight. 4. Add chocolate chips and enjoy!!!! It is good.....promise. XoXo, NaturallyNati |
